• production and purification of exopolysaccharides from lactic acid bacteria and other microbial polysaccharides
• extraction, isolation and purification of natural plant-based compounds
• structure determination by various methods: chemical (bypass, modification), physical (liquid or gas chromatography), spectroscopic (nuclear magnetic resonance, mass spectrometry, infrared spectroscopy) and mathematical (molecular modelling)
• study of structure-properties relations

• Prebiotic potential of dairy conjugated linoleic acids (CLAs): an in vitro analysis and their effects on the gastrointestinal ecosystem
