Areas of Expertise:

  • Identification of handling procedures in the cold chain (e.g. during postharvest handling, storage, transportation, distribution and retailing) resulting in temperature abuse of perishable foods leading to loss of sensory or nutritional quality, and/or concern for microbial safety; improvement of handling techniques during each step of the cold chain to maintain the quality and safety of perishable foods; development of systems to ensure the quality of fresh-whole and fresh-cut fruits and vegetables at retail.

Current Projects:

  • Methodologies to ensure the microbial safety of fresh fruits and vegetables throughout the distribution system
  • Handling techniques in the distribution and retailing system to maintain the nutritional content of fresh fruits and vegetables
  • Evaluation of low temperature thermal treatment equipment to determine the suitability for pasteurizing fresh horticultural products, combined with rapid, efficient cooling, as required by international regulations, and optimized for energy use, quality and safety
